Spicy Pork with Peppers and Rice

Tonight for my dinner I made a really nice dinner for the boyfriend and myself! Inspired by greenlitebites.com

Ingredients: (quantities are for 1 serving)

50g Brown Rice
1 medallion of Pork (with fat cut off)
50g Spinach
1/2 green pepper
2 Tablespoons of Light Soya Sauce
1/2 teaspoon of corn flour
Garlic Pepper to season

1. Boil your kettle and cook the brown rice
2. Cut your pork into thin strips (this will make it cook quicker)
3. Cut the pepper into chunks or strips
4. Spray a frying pan with low fat cooking spray and brown the pork
5. Add the peppers as soon as you want (depending on how crunchy you want them in the end)
6. Season with the garlic pepper to taste (depending on how spicy you want it)
7. Mix the corn flour and soya sauce + some more pepper if you want  – dribble over the cooked pork and peppers
8. Add the spinach at the very end until it has shrunk and cooked
9. Drain your rice and spoon onto your plate(s). Top with the pork and peppers.
